Create delicious smoked beef jerky with marinated sirloin slices for a flavorful chewy snack.
Ingredients:
  • 1 cup soy sauce
  • 4 tablespoons ground black pepper, or to taste
  • 1 tablespoon cider vinegar
  • 1 dash hot pepper sauce
  • 1 dash Worcestershire sauce
  • 2 pounds sirloin, cut into 1/2 inch thick slices
Instructions:
  • In a large bowl, mix together soy sauce, black pepper, vinegar, hot pepper sauce, and Worcestershire sauce. Add sirloin slices and toss well to coat. Cover with plastic wrap and refrigerate for 8 hours to overnight to marinate.
  • Lay out sirloin slices on wire racks, ensuring they are not stacked, and discard the marinade. Transfer the racks to an outdoor smoker and add wood chips as per the manufacturer's instructions.
  • Smoke the sirloin slices over low heat until the edges appear dry with a slight hint of moisture remaining in the center, which should take around 6 to 8 hours.
