Effortlessly whip up a delightful smoked chicken salad for a relaxing summer evening.
Ingredients:
  • 80ml soy sauce
  • Juice of 1 lime
  • 20.00 ml mirin (see Notes)
  • 50ml olive oil
  • 1 smoked chicken or 4 smoked chicken breasts, meat shredded
  • 225g cherries
  • 2 avocados, flesh chopped
  • 100g baby rocket leaves
  • 125.00 ml almonds
  • 1 small red onion, thinly sliced
Instructions:
  • Combine soy sauce, lime juice, mirin, oil, and vinegar in a screwtop jar. Shake vigorously until well mixed, then season with salt and pepper to taste.
  • Combine chicken, cherries, avocado, arugula, and almonds in a bowl. Drizzle with dressing and gently mix until well coated.
  • Serve on individual plates and generously garnish with freshly sliced onion.
