Smoked chicken wings with dry rub, served with creamy blue cheese dressing - a guaranteed crowd-pleaser appetizer.
Ingredients:
  • 16 chicken wings, tips discarded
  • 0.25 cup olive oil
  • 0.25 cup dry rub for chicken (such as McCormick® Grill Mates®)
  • 1 pound mesquite wood chips, soaked in water
  • 1 (8 ounce) bottle blue cheese salad dressing
Instructions:
  • In a large bowl, add chicken wings and olive oil, then mix with your hands to coat evenly. Sprinkle the dry rub over the wings and ensure they are well coated.
  • Ignite the charcoal and preheat the smoker to a gentle 170 to 200 degrees F (77 to 93 degrees C) per manufacturer's guidelines.
  • After draining, spread half of the wood chips directly over the charcoal. Arrange the wings evenly on the grill grate with the skin side facing down.
  • Infuse wings with smoky aroma, taking approximately 1 hour.
  • Flip the wings and add the rest of the wood chips to the charcoal. Smoke them until a meat thermometer near the bone reads 165°F (74°C), approximately 1 more hour.
  • Present the chicken wings accompanied by a side of tangy blue cheese dressing.
