Elevate stone-ground grits with baked eggs, pork sausage, and creamy Gouda.
Ingredients:
  • 10 eggs
  • 1 lb bulk sage pork sausage
  • 4 cups milk
  • 1 1/2 teaspoons salt
  • 1 cup uncooked stone-ground grits
  • 1/2 cup unsalted butter, cut into pieces
  • 6 oz smoked Gouda cheese, shredded (1 1/2 cups)
  • 1 cup whipping cream
  • 2 tablespoons chopped fresh parsley
  • 6 oz white Cheddar cheese, shredded (1 1/2 cups)
  • Additional chopped fresh parsley, if desired
Instructions:
  • In a 3-quart saucepan, bring milk and salt to a gentle boil over medium-high heat. Slowly mix in the grits. Simmer uncovered for 20 minutes, stirring often until thickened. Stir in butter and Gouda cheese until melted.
  • Grease a 3-quart casserole with cooking spray, then transfer the grits mixture into the casserole. Allow it to cool for 20 minutes.
  • In a 10-inch skillet, sauté the sausage over medium-high heat for 5 to 7 minutes, breaking it apart with a spoon, until cooked through. Place on paper towels to drain.
  • Preheat the oven to 350°F. In a large bowl, gently beat the eggs with a whisk, then mix in the whipping cream, 2 tablespoons of parsley, 1 cup of Cheddar cheese, and the cooked sausage. Pour this mixture over the grits and top with the remaining 1/2 cup of Cheddar cheese.
  • Bake without a cover for 35 to 40 minutes until the center is firm and the sides are golden brown. Finish by sprinkling with extra parsley.
