Smoked ocean trout and cream cheese pastries recipe

Indulge in simple and delicious smoked ocean trout and cream cheese pastries for a hassle-free weekend treat.
Ingredients:
  • 100g pitted Sicilian olives
  • 2 sheets puff pastry, just thawed
  • 100g spreadable cream cheese
  • 62.50 ml chopped chives
  • 2 x 100g pkts Premium Cold Smoked Ocean Trout
  • 1 egg, lightly whisked
  • 1 small red onion, very thinly sliced
  • 4.50 gm sugar
  • 20.00 ml red wine vinegar
  • 20.00 ml thyme leaves
  • 20.00 ml drained baby capers
Instructions:
  • Preheat your oven to 200°C. Line two baking trays with baking paper, then finely chop the olives in a food processor.
  • Cut the pastry sheets into quarters. Place them on the lined trays. Spread each pastry square with cream cheese in a circle, leaving a 2cm border. Add olive and half the chive on top. Divide the smoked ocean trout among the centers. Lightly brush the pastry border with egg. Fold the corners toward the center to partially cover the filling, then brush with more egg.
  • Bake for 15-20 minutes, or until the pastry is beautifully crisp and golden brown.
  • In a bowl, mix together the onion, sugar, and vinegar. Let it sit for 15 minutes until the onion softens. Stir in thyme, capers, and the rest of the chive. Season to taste.
  • Enjoy the pastries either warm or at room temperature alongside the savory onion mixture.
