Elegant quiche with smoked salmon and creamy camembert, ideal for a special occasion.
Ingredients:
  • 1 large sheet ready-rolled shortcrust quiche pastry, thawed
  • 1 garlic clove, crushed
  • 1 bunch asparagus, cut into 4cm pieces
  • 100g smoked salmon
  • 100g camembert, thinly sliced
  • 125ml cream
  • 80ml milk
  • 20.00 ml chopped fresh dill
  • Salt & freshly ground pepper
Instructions:
  • Preheat your oven to 190°C. Line a 23cm fluted flan tin with removable base with pastry, fill with baking paper and weight down with rice or baking beans. Bake on a tray for 15 minutes. After, remove the paper and beans, then bake at 180°C for an additional 10 minutes until golden and crisp.
  • In a large frying pan over medium heat, gently sauté leek and garlic in oil until soft, for about 5-6 minutes. Add asparagus and cook for an additional 2-3 minutes until tender. Transfer the mixture to a bowl and let it cool.
  • Evenly layer the delicious combination of leeks and asparagus onto the pastry base. Gently place the fresh salmon and creamy Camembert on top.
  • In a bowl, combine eggs, cream, milk, and dill. Season with salt and pepper. Pour the mixture over the filling. Bake for 25-30 minutes until golden and set. Let it rest for 10 minutes before serving.
