Ingredients:
  • 40.00 ml chopped fresh dill sprigs
  • 4 green onions, finely chopped
  • 1 tsp finely grated lemon rind
  • Sliced smoked salmon, to serve
  • Sour cream, to serve
  • 99.00 gm self-raising flour
  • 2 eggs
  • 128.75 gm milk
Instructions:
  • Prepare the basic batter by sifting flour into a bowl, creating a well in the center. In a separate jug, whisk together milk and eggs. Pour the egg mixture into the flour, whisk until smooth, then gently fold in dill, onion, and lemon rind.
  • In a frying pan over medium heat, heat 1 tablespoon of oil. Cook fritters using 1/4 cup of mixture for each, turning once golden and cooked through, about 3 minutes per side. Repeat this process to make a total of 16 fritters. Serve alongside salmon and sour cream.
