Smoked Salmon and Dill Muffins

Gourmet smoked salmon, cheese, and dill muffins made with Bisquick® - a classy bread basket addition.
Ingredients:
  • 3 tablespoons butter or margarine
  • 1 medium onion, finely chopped (1/2 cup)
  • 1 package (4 1/2 oz) smoked salmon, flaked or finely chopped
  • 1 1/2 cups Original Bisquick™ mix
  • 1 1/4 cups shredded Italian cheese blend (5 oz)
  • 2 tablespoons chopped fresh dill weed
  • 3/4 teaspoon grated lemon peel
  • 1/2 cup milk
  • 2 tablespoons vegetable oil
Instructions:
  • Preheat oven to 425°F and generously coat 12 regular-size muffin cups with cooking spray.
  • In a skillet, melt butter over medium-high heat. Sauté onion until tender, about 3 to 5 minutes. Add salmon and mix well.
  • Combine Bisquick mix, 3/4 cup cheese, dill, and lemon peel in a large bowl. In a separate small bowl, whisk together milk, oil, and egg until well blended. Create a well in the center of the dry ingredients and gently fold in the wet mixture until just combined. Mix in onion and salmon. Distribute batter evenly into muffin cups, filling each two-thirds full. Sprinkle the remaining 1/2 cup of cheese on top before baking.
  • Bake until golden brown for 18 to 20 minutes. Let cool for 2 to 3 minutes, then carefully remove from the pan and serve warm.
