Ingredients:
  • 2 eggs
  • 27.30 gm olive oil
  • 128.75 gm milk
  • 225.00 gm self raising flour
  • 100g smoked salmon, thinly sliced
  • 2 large zucchini, roughly grated
  • 20.00 ml chopped dill
Instructions:
  • In a large bowl, mix together eggs, olive oil, and milk. Stir in flour until smooth. Add smoked salmon, zucchini, dill, salt, and pepper, and gently combine.
  • Generously spray oil in a large non-stick frying pan over medium heat. Drop 1 tablespoonful of the smoked salmon mixture into the pan, leaving space for spreading. Cook for 2-3 minutes per side until golden and cooked through. Keep warm after removing. Repeat with the rest of the mixture, spraying the pan lightly between batches.
  • Accompany with a fresh green salad and a side of sweet chili sauce.
