Farm salmon fillets wrapped in smoked salmon, creating a moist, rich texture with a delicious smoky wild salmon taste after baking.
Ingredients:
  • 2 boneless center-cut salmon filets (7-8 ounces each), skin removed
  • Salt to taste
  • Freshly ground black pepper to taste
  • Cayenne to taste
  • 3 tablespoons melted butter, divided
  • 2 tablespoons freshly chopped dill or tarragon
  • 4 slices smoked salmon (about 2 ounces total)
  • 1 1/2 cups cooked mashed potatoes, optional
  • 2 tablespoons thinly sliced green onions
  • 1/2 lemon, cut into wedges
Instructions:
  • Season the salmon fillets with salt, pepper, and a touch of cayenne. Coat them with half of the melted butter, sprinkle with chopped dill, and top each fillet with 2 slices of smoked salmon, ensuring the entire surface and sides are covered. Refrigerate until ready to use.
  • Preheat the oven to a toasty 400°F (200°C).
  • Divide mashed potatoes between 2 baking dishes, placing salmon fillets on top. If desired, sprinkle a hint of cayenne over the fillets. Place the dishes on a baking sheet for convenience.
  • Bake the salmon in the preheated oven until the center of the thickest part of the fillet reaches an internal temperature of 135 to 140 degrees F (57 to 60 degrees C), approximately for 20 minutes.
  • After roasting, generously brush the luscious melted butter over the golden salmon fillets before elegantly topping them with fresh green onions. Present this mouthwatering dish with vibrant lime wedges.
