Smoked Sausage and Butternut Squash Pasta

Whip up this comforting butternut squash pasta with smoked sausage for a quick and delicious meal!
Ingredients:
  • 8 ounces uncooked rigatoni pasta
  • 8 ounces Hillshire Farm® Rope Smoked Sausage, cut into bias-cut pieces
  • 4 cups chopped butternut squash
  • 6 tablespoons unsalted butter, divided
  • 0.25 cup fresh sage leaves, chopped
  • 3 tablespoons fresh lemon juice
  • 1 cup grated Parmesan cheese
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
Instructions:
  • Prepare the pasta as instructed on the package and then drain it.
  • Preheat your oven to 450°F. Add sausage and squash to a large baking pan. Drizzle with oil and toss to coat evenly.
  • Roast in a hot oven for 12 minutes. Toss with 3 tablespoons of cubed butter and fragrant sage; return to the oven for 12-14 minutes, until the squash is beautifully caramelized and fork-tender.
  • In a large skillet over medium heat, melt the rest of the butter. Add pasta, sausage mixture, lemon juice, 3/4 cup cheese, salt, and pepper. Serve in shallow bowls, sprinkling the remaining 1/4 cup of cheese on top.
