Delicious smoked trout bruschetta - the perfect party appetizer!
Ingredients:
  • 2 x 150g pkts smoked ocean trout, flaked
  • 40.00 ml drained capers, coarsely chopped
  • 1/2 red onion, finely chopped
  • 3 tsp horseradish cream
  • 10.60 gm fresh lime juice
  • Salt & freshly ground black pepper
  • 1 Lebanese cucumber, ends trimmed
  • 4 slices ciabatta, toasted, to serve
  • Fresh dill sprigs, to serve
  • Lemon wedges, to serve
Instructions:
  • In a medium bowl, combine trout, capers, onion, horseradish, and lime juice. Season with salt and pepper, then gently toss everything together.
  • Create delicate cucumber ribbons by using a vegetable peeler to slice lengthwise.
  • Arrange the ciabatta on plates, layer with cucumber and trout mixture. Garnish with dill sprigs and serve with lemon wedges, if desired.
