Smoked Turkey Lo Mein

Easily whip up a delicious meal with pre-cooked smoked turkey and quick stir-fry noodles for a fast and satisfying dinner!
Ingredients:
  • 6 dried black (shiitake) mushrooms
  • 1/2 pound fully cooked smoked 97% fat-free turkey breast, cut into 1/2-inch cubes (1 1/2 cups)
  • 1 cup frozen sweet peas
  • 1 package (about 7 ounces) fresh stir-fry noodles with soy sauce-flavored sauce
  • 3/4 cup water
  • 1 tablespoon oyster sauce
  • 2 medium green onions, chopped (2 tablespoons)
Instructions:
  • Place dried mushrooms in a bowl and cover with hot water. Let them soak for about 20 minutes or until softened. Drain the mushrooms, rinse with warm water, and drain again. Squeeze out any excess moisture, discard the stems, and thinly slice the caps.
  • Prepare your wok or skillet with a light coat of cooking spray and heat it over medium-high heat. Cook the turkey for about 1 minute until browned. Then, add in the mushrooms, peas, the sauce packet from the noodles, water, and oyster sauce. Stir everything together until well combined.
  • Separate noodles by rinsing under hot water, then drain. Stir-fry noodles in the wok for about 2 minutes until heated through. Top with onions.
