Creamy, flavorful smoked turkey and rice soup with cheddar cheese.
Ingredients:
  • 1 smoked turkey carcass
  • 1 (32 fluid ounce) container vegetable broth
  • 2 cups water
  • 2 cups chopped fresh green beans
  • 1.5 cups frozen corn
  • 1 cup shredded carrot
  • 1 cup white rice
  • 0.5 cup chopped celery, or to taste
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped red bell pepper
  • 1 (4 ounce) package cream cheese, or more to taste
  • 1 cup shredded Cheddar cheese, or to taste
  • ground black pepper to taste
Instructions:
  • In a large soup pot, combine the turkey carcass, vegetable broth, and water. Bring to a boil, then simmer on low heat for 1 to 2 hours until the meat falls off the bones. Remove the carcass, pick off the meat, discard the bones, chop the turkey meat, and add it back to the broth.
  • Combine green beans, corn, carrot, rice, celery, onion, green bell pepper, and red bell pepper in the soup. Simmer until celery is tender and rice is cooked, about 1 hour. Stir in cream cheese and Cheddar cheese until smooth. Season with black pepper.
