Upgrade a classic apple-celery-walnut salad with smoked turkey for a quick and satisfying main dish!
Ingredients:
  • 2 medium red apples, chopped
  • 1/2 cup chopped celery
  • 1/2 lb. smoked turkey, cubed (1 1/2 cups)
  • 1/3 cup reduced-calorie mayonnaise or salad dressing
  • 4 cups torn Bibb or Boston lettuce
  • 1/4 cup chopped walnuts, toasted if desired
Instructions:
  • Mix together the apples, celery, turkey, and mayonnaise in a medium bowl until well combined.
  • Place a bed of lettuce on individual plates. Top with the apple mixture and sprinkle with walnuts.
