Smoked turkey with craisin & red onion relish

Impress guests with a festive platter of smoked turkey and cranberry, perfect for any holiday gathering.
Ingredients:
  • 200ml white vinegar
  • 1 x 170g pkt Ocean Spray craisins
  • 1/2 medium red onion, thinly sliced
  • 55g (1/4 cup) caster sugar
  • 21.00 gm fresh lime juice
  • 3kg Ingham smoked turkey breast buffe, thinly sliced
  • Crusty bread, to serve
Instructions:
  • Combine vinegar, craisins, onion, and sugar in a small saucepan. Bring to a boil over high heat, then reduce heat to medium and simmer, stirring occasionally, for 10-12 minutes until mixture is reduced by half.
  • Add the fresh lime juice, then adjust the seasoning with a pinch of salt and pepper. Allow the flavors to meld for 5 minutes as it cools slightly. Transfer the dish to a beautiful serving bowl.
  • Plate the turkey, topping each serving with a delicious mix of craisin and red onion relish. Serve alongside crusty bread immediately.
