Savory, spicy BBQ sauce with a hint of smokiness. Ideal for burgers, ribs, and brisket.
Ingredients:
  • 4 tablespoons butter (can substitute vegetable oil)
  • 1/2 grated onion
  • 1 15-ounce can crushed tomatoes
  • 1/2 cup cider vinegar
  • 2 tablespoons brown sugar
  • 1/4 cup molasses
  • 1 to 4 chipotle chiles in adobo (depending on how hot you want your bbq sauce)
  • 1 teaspoon liquid smoke
  • 1 tablespoon finely chopped fresh sage
  • Kosher salt, to taste
Instructions:
  • Cook the grated onion in butter: Melt the butter in a heavy pot over medium-high heat until it froths, then add the grated onion and a pinch of salt. Sauté until the onion starts to brown, approximately 4 to 5 minutes.
  • Finely chop one chipotle chile in adobo while the onions cook. Adjust the heat level by adding more chiles to your liking.
  • Combine chipotle with onions, then stir in tomatoes, vinegar, molasses, sugar, liquid smoke, and sage. Simmer for 5 minutes. Adjust seasoning with salt and extra chipotle to taste.
  • Gently simmer the sauce, uncovered, for 1 hour. Prior to serving, taste again for salt and chile seasoning.
