Smoky barbecued snow peas with chilli corn

Satisfying side dish that will have everyone craving more peas!
Ingredients:
  • 2 corn cobs, husks and silk removed
  • 1 red onion, cut into wedges
  • 200g snow peas, trimmed
  • 36.40 gm extra virgin olive oil
  • 1.25 gm smoked paprika
  • 82.50 ml parmesan, finely grated
  • 30g snow pea sprouts, trimmed
  • 5.20 gm Tabasco sauce (see Notes)
  • 21.00 gm lime juice
Instructions:
  • Preheat a chargrill pan or barbecue on high heat. Grill corn for 10 minutes, turning occasionally, until charred and tender. Add onion halfway through, cooking until charred and tender. Transfer corn to a board and onion to a bowl. Set aside.
  • Prepare the dressing by whisking together Tabasco, lime juice, and oil in a small bowl.
  • In a bowl, combine snow peas with oil and paprika. Season with salt and pepper, then toss to coat evenly. Cook for 1 minute on each side until charred and just tender. Transfer to the onions.
  • Cut the corn kernels from the cobs, keeping them in big chunks. Present the corn and onion mix beautifully on a plate. Drizzle with the dressing, sprinkle parmesan and add sprouts on top. Serve and enjoy!
