Impress guests with bourbon-infused, smoky BBQ pork featuring a flavorful blend of ginger and paprika.
Ingredients:
  • 125ml bourbon
  • 23.40 gm wholegrain mustard
  • 32.00 gm brown sugar
  • 10.00 gm smoked paprika
  • 5.00 gm ground ginger
  • 1.8kg Pork Leg Roast Boneless
  • 12 Brand White Soft Wraps
  • 350g Made Easy Kale Coleslaw Kit
Instructions:
  • Preheat a covered barbecue on high or alternatively, preheat oven to 220C.
  • In a large bowl, whisk together bourbon, mustard, sugar, paprika, and ginger. Season to taste. Add pork and coat well. Transfer pork and bourbon mixture to a disposable baking tray. Pour 1/4 cup (60ml) water into the tray. Cook pork covered on indirect heat in a barbecue or in the oven for 30 minutes. Lower heat to low (or set oven to 180C). Continue cooking for another 1 hour 30 minutes, basting with juices in the tray every 20 minutes, until fully cooked. Remove pork from heat, cover with foil, and let it rest for 20 minutes before serving.
  • Heat the wraps on the barbecue for 10 seconds on each side, then cover to keep warm. Follow the packet directions to prepare the kale coleslaw.
  • Serve the pork alongside a side of creamy coleslaw and warm wraps.
