Indulge in tender beef ribs with a smoky bourbon sauce for a delectable meal.
Ingredients:
  • 10.00 gm smoked paprika
  • 2 tsp garlic powder
  • 1 tsp cracked black pepper
  • 5.00 gm ground cumin
  • 1 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1.5kg beef short ribs
  • 187.50 ml bourbon
  • 45.00 gm brown sugar
  • 255.00 gm beef stock
  • 2 red onions, unpeeled, cut into wedges
  • 20.00 ml small fresh basil leaves
  • Baked potatoes, to serve
  • Sour cream, to serve
  • Chopped chives, to serve
  • Grilled corn cobs, to serve
  • Softened butter, to serve
  • Ranch coleslaw kit, to serve
Instructions:
  • Preheat your oven to 160C (140C fan-forced).
  • In a bowl, mix paprika, garlic powder, pepper, cumin, oregano, and cayenne pepper. Season with salt. Rub the mixture all over the ribs until coated.
  • In a sizable, oven-safe baking dish, heat oil over medium heat. Sear beef for 2 minutes per side until lightly browned. Remove to a plate.
  • Pour in bourbon and cook until reduced by half. Stir in sugar, stock, onion, and 1/2 cup water. Bring to a simmer, place ribs back in the dish and cover with foil. Bake in the oven at 180C/160C fan-forced for 3 1/2 hours until beef is almost tender. Uncover, increase oven temperature to 180C/160C fan-forced, and bake for an additional 45 minutes, turning ribs halfway through, until tender. Enjoy!
  • Place the ribs on a plate, remove the onion. Cover loosely with foil to keep warm. Simmer over medium heat for 5 minutes or until the sauce thickens.
  • Cut the beef into ribs then generously drizzle with sauce and sprinkle with fresh basil leaves. Serve with loaded baked potatoes, buttered corn, and tangy coleslaw.
