Smoky BBQ double bacon burger

Indulgent double bacon and smoky BBQ beef meatloaf - a meat lover's dream.
Ingredients:
  • 500g beef mince
  • 1/2 small brown onion, coarsely grated
  • 1 garlic clove, crushed
  • 45.20 gm Chipotle barbecue sauce, plus extra to serve
  • 40.00 ml finely chopped fresh oregano
  • 45g (1/2 cup) dried (packaged) breadcrumbs
  • 1 egg, lightly whisked
  • 9.20 gm olive oil
  • 4 large slices vintage cheddar cheese
  • 4 large brioche rolls, halved, toasted
  • 8 rashers DON Premium Butcher’s Style Bacon
  • 85g (1/3 cup) tomato relish
  • Baby rocket leaves, to serve
  • Crispy onion rings, to serve
Instructions:
  • Combine mince, onion, garlic, chipotle barbecue sauce, oregano, breadcrumbs, egg, and seasonings in a bowl. Mix thoroughly with clean hands. Divide the mixture into 4 portions and shape into 1cm-thick patties.
  • 1. In a large frying pan over medium heat, sizzle the patties for 5 minutes until golden brown. Flip the patties and crown each one with a slice of cheese. Allow them to cook for an additional 5 minutes until fully cooked and the cheese is gooey. Plate and tent loosely with foil to hold the warmth.
  • Heat a chargrill pan over medium-high heat and toast the cut brioche buns for about 2 minutes until lightly golden. Set aside.
  • Grill half of the bacon for 3 minutes on each side until crispy. Place on a paper towel-lined plate and keep warm. Repeat with the rest of the bacon.
  • - Coat the buns with tomato relish. - Layer with rocket, patties, and bacon. - Drizzle with more chipotle barbecue sauce. - Place brioche tops on patties. - Serve alongside onion rings.
