Smoky beef and ale skewers with green apple salsa

Paprika and ale marinated beef skewers - perfect for a crowd-pleasing barbecue.
Ingredients:
  • 10.00 gm smoked paprika
  • 16.00 gm brown sugar
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano leaves
  • 1/4 tsp ground allspice
  • 330ml bottle pale ale
  • 1.5kg thick beef rump steak, trimmed, cut into 4cm pieces
  • 36.40 gm extra virgin olive oil
  • Lemon wedges, to serve
  • Small fresh flat-leaf parsley leaves, to serve
  • 1 medium granny smith apple, cored, finely diced
  • 1/2 small red onion, finely diced
  • 2 long red chillies, thinly sliced
  • 20.00 ml chopped fresh chives
  • 40.00 ml apple cider vinegar
  • 5.90 gm wholegrain mustard
Instructions:
  • In a large jug, mix paprika, brown sugar, garlic, oregano, and allspice. Pour in ale and stir well. Place beef in a shallow glass or ceramic dish and pour the marinade over it. Cover and refrigerate for 4 hours to enhance flavors.
  • Skewer beef slices and set aside the marinade. Season with salt and pepper, then drizzle with oil.
  • Preheat a barbecue grill or chargrill pan on medium-high heat. Grill skewers, basting with reserved marinade and turning occasionally, for about 8 minutes until cooked to your preferred level of doneness. Transfer to a plate, cover loosely with foil, and let rest for 5 minutes before serving.
  • Prepare a refreshing Green Apple Salsa by mixing green apple, onion, chili, chives, vinegar, oil, and mustard in a bowl. Add a pinch of salt and pepper to taste.
  • Garnish beef skewers with salsa, lemon wedges, and fresh parsley leaves.
