Indulge in a flavorful twist on classic chili with our smoky beef and rice chili, featuring rich, beefy flavors enhanced by smoked paprika. Easily customize the smokiness to your preference by adjusting the amount of paprika used.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 medium onion, chopped
  • 2 cups hot cooked brown rice
  • 2 cups thick & chunky salsa
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 cup beef both or water
  • 2 teaspoons chili powder
  • 1 to 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper (cayenne)
  • Toppings such as shredded Cheddar cheese, sour cream and tortilla chips, if desired
Instructions:
  • In a large stockpot, sear the beef over medium-high heat until browned; then drain any excess fat. Stir in the onion and cook for 2 to 3 minutes until it becomes tender and translucent, stirring frequently.
  • Combine all remaining ingredients (excluding Toppings) and bring to a boil. Reduce heat to medium-low and let simmer for about 10 minutes to meld all the flavors together.
  • Serve the dish in bowls and garnish with your favorite toppings.
