Intensely flavorful smoky, spicy, sweet chicken that's a family favorite. Guaranteed to impress your tastebuds!
Ingredients:
  • 4 cloves garlic, minced
  • 0.5 onion, grated
  • 0.5 cup bourbon
  • 0.25 cup cider vinegar
  • 2 cups ketchup
  • 0.25 cup Worcestershire sauce
  • 1 tablespoon liquid smoke flavoring
  • 1 chipotle pepper in adobo sauce, minced
  • 1 teaspoon adobo sauce from canned chipotle peppers
  • 0.25 cup brown sugar
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 2 tablespoons grill seasoning, or to taste
  • 4 slices bacon, cut in half
  • 4 thick slices red onion
  • 4 slices provolone cheese
Instructions:
  • In a wide skillet, warm 1 teaspoon of flavorful olive oil over medium heat. Saute the garlic and onion until the onion is soft and translucent, for about 5 minutes. Carefully pour in the bourbon and let it simmer for 10 minutes. Keep a lid nearby to cover the skillet if needed to prevent flames.
  • Combine cider vinegar, ketchup, Worcestershire sauce, liquid smoke, minced chipotle pepper, adobo sauce, and brown sugar in a pot. Bring to a boil, then simmer over medium-low heat for 15 minutes. Transfer the sauce to a bowl and chill in the refrigerator for about 30 minutes until cooled.
  • Season the chicken breasts with grill seasoning and place them in a shallow glass dish. Pour most of the cooled sauce over the chicken, reserving 1 cup for later. Refrigerate the chicken for 2 hours. In a large skillet, cook the bacon until crispy. Drain on a paper towel-lined plate and set aside.
  • Preheat the grill to medium-high heat.
  • 1. Discard the marinade from the chicken. Grill the chicken on high heat, brushing with the sauce, until fully cooked, about 10 minutes per side. 2. Brush onion slices with 1 teaspoon of olive oil and secure with toothpicks. Grill over indirect heat until tender, about 15 minutes.
  • Serve by transferring the chicken to plates and layering with grilled onion, bacon, and provolone cheese. Remember to remove toothpicks before enjoying.
