Smoky paprika & garlic prawns with aioli

Elevate simple ingredients with this gourmet smoked prawn dish.
Ingredients:
  • 24 large green prawns, peeled leaving tails intact
  • 60ml (1/4 cup) olive oil
  • 2 garlic cloves, finely chopped
  • 2 tsp finely grated lemon rind
  • 5.00 gm smoked paprika
  • Olive oil, to brush
  • 235g (1 cup) whole-egg mayonnaise
  • 21.00 gm fresh lemon juice
  • 1 garlic clove, crushed
  • 62.50 ml chopped fresh continental parsley
Instructions:
  • Prepare the prawns by deveining them, then skewer them. Place in a dish. Mix oil, garlic, lemon rind, and paprika in a bowl. Season with salt and pepper, pour over prawns, and marinate for 10 minutes.
  • Prepare the aioli by mixing mayonnaise, lemon juice, garlic, salt, pepper, and parsley in a small bowl.
  • Preheat a barbecue flat plate or grill on high, then lightly brush with oil. Cook the skewers for 2-3 minutes per side, or until the prawns change color and the tails are crisp. Serve with the aioli.
