Elevate chickpeas with smoky charred aubergine for a taste of the Mediterranean coast.
Ingredients:
  • 2 aubergines
  • 50 g sesame seeds
  • ½ x 700 g jar or 1 x 400g tin of chickpeas
  • 2 lemons
  • 200 g radishes ideally with leaves
Instructions:
  • Pierce aubergines all over, char them over direct flame on hob or under grill until soft. Toast sesame seeds in non-stick pan until golden, then blend most seeds with chickpeas, lemon juice, and olive oil until smooth. Pickle radishes in lemon juice and salt. Remove aubergine skin, halve, season, and cook with chickpeas until crispy. Serve aubergines with radishes, sesame seeds, and olive oil.
