Transform your opinion on liver with this easy and delicious recipe.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1 large onion, sliced
  • 1 pound beef liver
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 1 (8 ounce) can tomato sauce
  • 0.25 cup water
  • 0.5 teaspoon dried oregano
Instructions:
  • In a large skillet over medium heat, warm vegetable oil until shimmering. Cook onions until tender, but not caramelized. With a slotted spoon, transfer onions to a plate and keep warm. Cut liver into individual portions, discarding any membranes.
  • Combine flour, salt, and pepper in a shallow dish. Coat liver in the flour mixture. Sear liver in a hot skillet until browned on both sides. Top with onions. Pour tomato sauce and water over, ensuring everything is evenly coated.
  • Sprinkle oregano evenly and simmer uncovered over low heat for 8 to 10 minutes, stirring occasionally. Season with salt and pepper to taste, being cautious not to overcook and toughen the liver. Serve alongside mashed potatoes and green beans.
