Smothered Skillet Beef Burritos

Satisfy your cravings with these beef burritos smothered in enchilada sauce. One skillet, quick dinner bursting with Mexican flavor. Learn to make a favorite dish that's sure to impress.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 lb lean (at least 80%) ground beef
  • 1/2 cup diced onion
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1/2 cup water
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 cup from 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 1/2 cups cooked rice
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • Chopped fresh cilantro leaves, if desired
  • Lime wedges, if desired
Instructions:
  • Preheat oven to 350°F. In a 12-inch ovenproof skillet, heat oil over medium-high heat. Cook beef and onion for 6-8 minutes until browned, then drain. Return mixture to skillet and stir in taco seasoning mix and water. Cook for an additional 2-3 minutes until thickened. Transfer to a medium bowl and set aside. Clean the skillet and spray with cooking spray.
  • Lay out tortillas and spoon refried beans, rice, and beef mixture in a 4-inch strip down the center of each. Sprinkle each with 1 cup of cheese. Roll them up into burritos, placing seam side down in a skillet. Bake for 25 minutes.
  • Drizzle the burritos with enchilada sauce and sprinkle the remaining 1 cup of cheese on top. Bake for an additional 8 to 10 minutes until the cheese is melted and the burritos are heated through. Serve with cilantro and lime wedges.
