Marinate filet mignon in balsamic-Dijon mixture while grilling onions.
Ingredients:
  • 4 (6 ounce) filet mignon steaks
  • seasoned salt to taste
  • cracked black pepper to taste
  • 0.25 cup extra virgin olive oil
  • 0.25 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried rosemary
  • 1 tablespoon butter
  • 2 cups onion slices
  • 1 teaspoon white sugar
  • 4 ounces blue cheese, crumbled
Instructions:
  • Season steaks generously with seasoned salt and black pepper, then lay them flat in a spacious baking dish. Combine olive oil, balsamic vinegar, mustard, and rosemary in a bowl, then drizzle over the steaks, ensuring they are well coated. Allow the steaks to marinate for up to 30 minutes.
  • As the meat marinates, melt butter in a skillet over medium heat and cook onion slices until soft. Add sugar and continue cooking until the onions are caramelized. Set aside.
  • First, fire up your grill to create a sizzling hot zone on one side and a cozy medium heat zone on the other side.
  • Brush the grill grate with a hint of oil. Grill the steaks over high heat for 10 minutes, flipping once. Towards the end, transfer the steaks to a cooler section of the grill. Add caramelized onions and blue cheese on top of each steak. Close the lid and cook until the cheese is melted.
