Irresistible sweet and savory cornbread loaded with whole corn kernels - perfect for leaving holiday guests craving more!
Ingredients:
  • 0.25 pound margarine
  • 1 (8 ounce) container reduced-fat sour cream
  • 1.5 teaspoons vanilla extract
  • 0.25 teaspoon ground nutmeg
  • 1.5 teaspoons ground cinnamon
  • 0.25 tablespoon ground cloves
  • 1 (8.5 ounce) package dry corn muffin mix
  • 0.25 cup milk
  • 1 (15 ounce) can cream-style corn
  • 1 (15.25 ounce) can sweet corn, drained
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give your baking dish a nice, light greasing.
  • Using an electric mixer, cream the margarine and sugar in a large bowl until light and fluffy. Add the eggs one at a time, incorporating each before adding the next. Mix in sour cream, vanilla, nutmeg, cinnamon, and cloves. Alternately add corn muffin mix and milk, mixing until just combined. Gently fold in cream-style corn and sweet corn. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 45 minutes to 1 hour, or until a toothpick inserted in the center comes out clean. Let it cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
