Sneaky Pizza Bake Potatoes: Pepperoni, pizza sauce, and mozzarella cheese stuffed inside with a hidden serving of cauliflower. Your delicious secret is safe with us!
Ingredients:
  • 4 large baking potatoes
  • 2 tablespoons olive oil
  • 1/2 head cauliflower
  • 1/2 cup sliced pepperoni
  • 1 cup Muir Glen™ organic pizza sauce (from 15-oz can)
  • 3/4 cup shredded mozzarella cheese (3 oz)
  • Shredded lettuce, if desired
Instructions:
  • Preheat the oven to 400°F. Thoroughly scrub the potatoes, then massage the skins with oil. Use a fork to pierce the potatoes multiple times to release steam. Bake on the top oven rack for 40 minutes or until soft.
  • Cook the cauliflower in a large pot of boiling water until very soft and tender. Drain the cauliflower. Reserve 12 slices of pepperoni and chop the remaining pepperoni. Set aside.
  • Once the potatoes have cooled, trim a thin slice off the top of each one. Carefully scoop out the potato pulp, leaving a 1/4-inch shell, and transfer the pulp to a large bowl. Mix in cooked cauliflower, chopped pepperoni, pizza sauce, and 1/2 cup of cheese. Blend well using an electric mixer on medium speed. Fill the potato shells with the mixture.
  • Arrange the potatoes on a baking sheet without greasing. Sprinkle them with the remaining 1/4 cup of cheese and add 3 slices of reserved pepperoni on top of each potato.
  • Bake until hot and cheese is bubbly, typically 15 to 20 minutes. Serve garnished with lettuce.
