Snickers and peanut butter caramel poke cake recipe

Heavenly cake with dark chocolate, peanut butter, and Snickers.
Ingredients:
  • 180g block dark chocolate, chopped
  • 141.90 gm caster sugar
  • 200g butter, softened
  • 3 eggs, lightly beaten
  • 150.00 gm self-raising flour
  • 82.50 ml plain flour
  • 32.50 gm cocoa powder
  • 395g can sweetened condensed milk
  • 130.00 gm smooth peanut butter
  • 99.00 gm icing sugar mixture
  • 2 x 50g snickers bars, thinly sliced
  • Chocolate syrup, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm square cake pan with a 6cm depth, then line it with baking paper, allowing 2cm of paper to extend above the edges of the pan.
  • In a small saucepan over low heat, melt chocolate, sugar, 125g butter, and 1/2 cup water, stirring until smooth. Allow to cool for 15 minutes, then transfer to a large bowl. Whisk in eggs, fold in flours and cocoa powder until combined. Pour mixture into prepared pan and bake for 45 to 50 minutes until a skewer comes out clean. Let the cake cool in the pan for 30 minutes before serving.
  • Press the end of a wooden spoon into the warm cake to create deep holes, ensuring they are about 3cm apart, but don't pierce through the bottom. Let the cake cool fully.
  • In a saucepan over medium-low heat, mingle condensed milk and peanut butter. Cook and stir consistently for 5 minutes until the mixture gently boils and thickens. Allow to cool for 5 minutes.
  • Transfer the cake onto a serving plate. Pour half of the warm peanut butter caramel sauce into a jug, saving the rest for later. Fill each hole in the cake with the sauce, then cover the cake. Chill in the refrigerator for 30 minutes.
  • With an electric mixer, whip icing sugar and the rest of the butter until fluffy. Mix in the remaining cooled sauce until fully combined. Chill for 10 minutes until the frosting thickens. Frost the cake, then garnish with sliced Snickers bars and a chocolate syrup drizzle. Enjoy!
