Soft Oatmeal Cookies

Classic oatmeal cookies - soft, chewy, with a touch of cinnamon. Family favorite!
Ingredients:
  • 2 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats
  • nonstick cooking spray with flour
  • 2 tablespoons water
  • 2 tablespoons white sugar, or as needed
Instructions:
  • Combine flour, cinnamon, baking soda, and salt in a medium bowl and whisk until fully mixed.
  • In a large bowl, use an electric mixer to whip together butter, 1 cup of white sugar, and brown sugar until creamy, for 2-3 minutes. Add eggs one by one, followed by vanilla. Slowly mix in dry ingredients until combined. Stir in oats until well mixed. Cover the bowl and refrigerate dough for at least 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C. Spray two cookie sheets with floured cooking spray. Set out a small bowl of water and another small bowl with 2 tablespoons sugar.
  • Take the chilled dough and shape into walnut-sized balls, then space them 2 inches apart on the cookie sheets. Use a large fork dipped in water and sugar to flatten each cookie, re-dipping as needed.
  • Bake in the preheated oven for 8 to 10 minutes until edges turn light golden brown and centers are almost set, remember to switch racks halfway through. Let cookies cool on the baking sheet for 5 minutes before moving to a wire rack for complete cooling.
