Wholesome oatmeal cookies with whole wheat flour, rolled oats, sweet dates, and reduced sugar for a delicious, chewy, and easy-to-make treat.
Ingredients:
  • 1 cup butter, softened
  • 0.5 cup white sugar
  • 0.75 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups rolled oats
  • 1 cup diced, pitted dates
Instructions:
  • In a large bowl, use an electric mixer to blend together butter, white sugar, and brown sugar until smooth and creamy. Add eggs one at a time, ensuring each is well mixed before adding the next. Stir in vanilla.
  • In a separate bowl, mix together the flours, baking soda, salt, and cinnamon. Add this mixture to the creamed mixture and stir. Gently fold in the oats and dates. Cover the dough and let it chill in the refrigerator for at least 1 hour.
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease 2 baking sheets.
  • Shape the dough into walnut-sized balls and arrange them 2 inches apart on the baking sheets. Gently press down on each ball with a large fork to flatten.
  • Bake the cookies in the preheated oven until golden brown, for 8 to 10 minutes. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
