Healthier soft gingerbread cookies made with whole wheat flour, less sugar, and butter for a delicious twist.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 cup white whole wheat flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 0.75 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.75 cup unsalted butter
  • 1 tablespoon water
  • 0.25 cup molasses
  • 3 tablespoons natural (raw) sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then sift a blend of all-purpose flour, whole-wheat flour, ginger, baking soda, cinnamon, cloves, and salt.
  • In a large bowl, use an electric mixer to whip together butter and 3/4 cup sugar until creamy. Add the egg, followed by water and molasses. Slowly mix in the flour mixture until just combined. Shape the dough into walnut-sized balls, place them 2 inches apart on ungreased baking sheets, and gently flatten them before baking.
  • Bake until cookies are golden brown, about 8 to 10 minutes. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
