Light and soft low-calorie peanut butter cookies with reduced-fat peanut butter for a healthier twist.
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 cup unsalted butter
  • 0.5 cup reduced-fat creamy peanut butter (such as Jif®)
  • 0.5 cup reduced-fat crunchy peanut butter (such as (Jif®)
  • 1 egg white
  • 0.33333334326744 cup white sugar
  • 1 egg
  • 0.33333334326744 cup brown sugar
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C), then sift together flour, baking soda, and salt in a bowl.
  • In a large bowl, combine butter, creamy peanut butter, and crunchy peanut butter until smooth. Add egg white and white sugar, mixing until smooth. Mix in the whole egg and brown sugar until smooth. Gently fold in the flour mixture until well combined to form the batter.
  • Shape dough into 1 1/4-inch balls and space 2 inches apart on baking sheets. Flatten balls with a fork to make a crosshatch pattern. Chill on the baking sheet until firm, about 5 to 8 minutes in the freezer.
  • Bake in the preheated oven for 15 minutes until the cookies puff up. Allow them to cool on the pans for 10 minutes, then transfer to a wire rack to cool completely.
