Impress with this irresistible homemade slice perfect for any occasion, make ahead for convenience.
Ingredients:
  • Melted butter, to grease
  • 140g butter, at room temperature
  • 141.90 gm caster sugar
  • 2 eggs
  • 375.00 ml plain flour
  • 37.50 gm self-raising flour
  • 176.25 gm sour cream
  • 670g jar pitted Morello cherries, drained
  • 50g butter, chilled, chopped
  • 125.00 ml plain flour
  • 125.00 ml flaked almonds
  • 45.00 gm firmly packed brown sugar
Instructions:
  • Preheat your oven to 180C. Grease a 16cm x 26cm slab pan with melted butter and line the base and two long sides with overhanging non-stick baking paper.
  • Beat butter and sugar together in a bowl using an electric beater until pale and creamy.
  • Gradually add the eggs one by one, ensuring each is well beaten into the mixture before adding the next.
  • Gently incorporate the mixed flours, sour cream, and milk until a smooth batter forms. Transfer the batter into the greased pan.
  • Spread and press the mixture evenly onto the base of the pan using the back of a metal spoon.
  • Arrange the cherries on top and delicately press them into the crust.
  • In a bowl, rub the butter into the flour with your fingertips until it looks like coarse breadcrumbs. Mix in the almonds and sugar.
  • Evenly spread the crumble mixture over the cherries. Bake for 50 minutes or until a skewer comes out clean when inserted into the center. Allow to cool before cutting into squares for serving.
