Cherry tart with hazelnut crumble: a perfect balance of sweet and tart flavors for a delightful winter treat.
Ingredients:
  • 2 x 425g cans stoneless black cherries, well drained
  • 425g can apple pie fruit
  • 300g carton sour cream
  • 45.00 gm dark brown sugar
  • 1 egg, lightly whisked
  • 4.40 gm vanilla essence
  • ice-cream, to serve
  • 125.00 ml plain flour, sifted
  • 100g hazelnut meal (ground hazelnuts)
  • 90.00 gm dark brown sugar
  • 125g butter, chilled, chopped
Instructions:
  • Preheat your oven to 190°C and generously grease a 5cm deep dish that can hold 6 cups.
  • Mix together the cherries and apple, then transfer the mixture into an ovenproof dish. In a separate container, whisk together the sour cream, sugar, egg, and vanilla until well combined. Pour this mixture over the fruit in the dish.
  • Prepare the crumble topping by pulsing together flour, hazelnut meal, dark brown sugar, and butter in a food processor until it reaches a coarse breadcrumb consistency. Sprinkle over the fruit mixture.
  • Bake until crumble is golden, let it cool slightly, then enjoy warm with a scoop of ice cream.
