No-fuss cherry crumble galette

Create a stunning winter dessert using basic supermarket items in less than an hour.
Ingredients:
  • 400g frozen cherries
  • 1 sheet sweet shortcrust pastry, just thawed
  • 62.50 ml macadamia meal
  • 5.00 gm custard powder
  • 40.00 gm raw sugar
  • 2 Anzac biscuits, coarsely crushed
  • Frozen berry yoghurt, to serve
Instructions:
  • Lay the cherries on a paper towel-lined plate to defrost and drain thoroughly. Preheat the oven to 200C/180C fan forced and line a baking tray with parchment paper. Cut the pastry into a 23cm circle and place it on the lined tray.
  • Cover the pastry with macadamia meal and custard powder, leaving a 4cm border. Add the cherries on top. Fold the edges of the pastry over the fruit to partly enclose the filling, sealing by pinching. Brush the pastry edges with egg and sprinkle with sugar. Bake for 15 minutes, then sprinkle with biscuit and bake for another 15 minutes or until pastry turns golden brown. Serve with frozen yoghurt.
