Spicy cheesy chicken enchiladas with zesty salsa, jalapenos, and fresh cilantro for a bold and refreshing twist.
Ingredients:
  • 1 bunch cilantro
  • 2 (7 ounce) cans jalapeno salsa
  • 2 (7 ounce) cans prepared green chile salsa
  • 2 skinless, boneless chicken breast halves, cooked and shredded
  • 1 onion
  • 12 (6 inch) flour tortillas
  • 2 cups shredded Cheddar cheese
Instructions:
  • Blend together fresh cilantro, sour cream, jalapeno salsa, and half a can of green chile salsa until smooth. Set the mixture aside.
  • Combine tender shredded chicken, aromatic onion, and the zesty essence of 1 1/2 cans of green chile salsa in a large bowl. Mix until thoroughly combined.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Warm tortillas in the oven until soft. Spread enough of the sour cream mixture on the bottom of a 9x13 inch baking dish. Spoon 2 generous tablespoonfuls of the chicken mixture onto each tortilla, roll them up, and arrange them seam side down in the baking dish. Pour the rest of the sour cream mixture over the top and sprinkle with shredded cheese.
  • Seal the dish with foil and bake at 350°F (175°C) for approximately 30 minutes, or until it's hot and bubbling.
