Creamy sour cream and chicken soup sauce blankets cheesy chicken enchiladas.
Ingredients:
  • 2 skinless boneless chicken breasts, cut into 1-inch cubes
  • 1.5 cups shredded Cheddar cheese
  • 12 (10 inch) flour tortillas
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (3 ounce) can chopped green chiles, undrained
  • 1 (8 ounce) container sour cream
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Heat your oven to 350°F (175°C).
  • Preheat a large skillet over medium-high heat. Cook and stir chicken breast until it's no longer pink in the center, approximately 10 minutes. Distribute chicken, 1 1/2 cups of Cheddar cheese, and onions evenly onto the tortillas, then roll them up and place seam side down in a 9x13 inch baking pan.
  • In a saucepan over medium heat, warm up the cream of chicken soup and green chiles. Mix in sour cream and continue to stir for about 10 minutes until heated through. Pour the creamy sauce over tortillas, sprinkle with the rest of the Cheddar cheese, and bake in a preheated oven until bubbly and cheese is melted, approximately 25 minutes.
