Indulge in a luscious cream pie filled with raisins, sour cream, and zesty lemon custard, topped with a creamy layer and chilled to perfection.
Ingredients:
  • 1 (9 inch) pie crust, baked
  • 0.75 cup white sugar
  • 2 tablespoons cornstarch
  • 0.25 teaspoon salt
  • 2 eggs
  • 2 cups sour cream
  • 1 cup raisins
  • 2 tablespoons lemon juice
Instructions:
  • In a large saucepan, mix together sugar, cornstarch, and salt. Beat eggs, then add them to the saucepan along with 1 1/2 cups sour cream, raisins, and lemon juice. Cook over low heat, stirring constantly until thickened. Pour the custard into the pie shell and let it cool.
  • Smoothly spread the remaining 1/2 cup of sour cream over the cooled filling. Chill in the refrigerator for several hours until completely chilled.
