Sour Cream-Cranberry Bars

Indulge in these irresistible cranberry bars - you won't be able to stop at just one!
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 cup packed brown sugar
  • 2 cups quick-cooking oats
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups dried cranberries
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon grated lemon peel
  • 1 teaspoon vanilla
  • 1 egg
Instructions:
  • Preheat oven to 350°F. Combine butter and brown sugar in a large bowl, then mix in oats, 1 1/2 cups flour, and baking soda until crumbly. Press half of the mixture into an ungreased 13x9x2-inch rectangular pan. Bake for 10 to 12 minutes until golden brown.
  • Combine the rest of the ingredients in a large bowl, then pour the mixture over the baked crust. Sprinkle the remaining oat mixture on top of the filling.
  • Bake until the top is golden brown and the filling is set, for about 25 to 30 minutes. Allow to cool completely for about 1 hour. Cut into 32 bars by slicing into 8 rows by 4 rows.
