Create a tangy sourdough starter to elevate your bread. Use kitchen scales for precision, even for water measurements.
Ingredients:
  • 210g wholemeal plain flour
  • 360g lukewarm water
  • 150g plain flour
Instructions:
  • Day 1, mix 60g wholemeal flour and 60g water in a medium sealable glass jar. Cover with lid without sealing too tight. Leave in a warm, draft-free spot for 2 days until it bubbles and develops a slightly sour scent.
  • Transfer the starter to a clean bowl. Then, place 60g of the starter in a clean jar. Mix in 30g plain flour, 30g wholemeal flour, and 60g water. Stir well with a small spoon or chopsticks. Cover the jar and let it sit for 24 hours. Discard the remaining starter in the bowl. Repeat this feeding process two more times, making sure to clean the bowl and jar each time. Let it sit for 24 hours after each feed.
  • For the next two feedings on day 6, use the remaining plain flour, wholemeal flour, and water. Allow the mixture to sit for 12 hours after each feed.
  • After 7 days, use the starter (refer to the tip for testing). Measure 100g of starter and proceed with the homemade sourdough recipe.
