Golden brown South African donuts deep-fried and soaked in lemon ginger syrup - decadent Koeksisters.
Ingredients:
  • 3 cups white sugar
  • 2 cups water
  • 0.5 medium lemon, zested in large strips
  • 3 (1/4 inch thick) slices peeled fresh ginger
  • 1 teaspoon lemon juice
  • 2 cups cake flour
  • 1 tablespoon baking powder
  • 2 tablespoons cold unsalted butter, cut into chunks
  • 0.5 cup milk
  • 2 cups oil, or as needed
Instructions:
  • For the syrup: In a saucepan, combine sugar, water, lemon zest, ginger, and lemon juice. Bring to a boil over medium-high heat, then simmer for 10 minutes. Remove from heat and let cool to room temperature for 30 to 45 minutes. Transfer to a bowl, cover, and refrigerate for enhanced flavor, 8 hours to overnight.
  • Prepare the koeksister dough by sifting flour, baking powder, and salt into a bowl. Incorporate butter using your fingertips until a cornmeal texture forms. Pour in milk and mix until a smooth dough comes together. Wrap the dough in plastic wrap and allow it to rest for a minimum of 2 hours.
  • Roll out the dough on a floured surface into a 5x14-inch rectangle, 1/4-inch thick. Cut into 28 half-inch wide strips. Twist two strips together, pinch the ends, and repeat with the remaining strips. Cover and let rest for 15 minutes under a cloth.
  • Heat 2 inches of oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C. Place a wire rack over a baking sheet and transfer some of the cold syrup to a bowl; refrigerate the rest of the syrup.
  • Fry three koeksisters in hot oil until golden brown and fragrant, for 2 to 5 minutes. Use a slotted spoon to transfer them to cold syrup for 10 seconds. Place them on a wire rack to cool. Repeat with the remaining koeksisters, refreshing the cold syrup as needed.
