Crunchy drumsticks - kid-friendly favorite!
Ingredients:
  • 1kg chicken drumstick
  • 260.00 gm buttermilk (see notes)
  • 3 garlic cloves, crushed
  • 562.50 ml cornflakes
  • 125.00 ml grated parmesan
  • 3.75 gm mild paprika
  • 2 tsp onion flakes
  • 82.50 ml panko breadcrumbs
  • 30.00 ml chopped fresh flat-leaf parsley leaves
  • Olive oil cooking spray
  • Carrot sticks, to serve
  • Celery sticks, to serve
  • Cucumber sticks, to serve
  • Halved cherry tomatoes, to serve
Instructions:
  • Peel the skin off the drumsticks according to the note. Combine the drumsticks, buttermilk, and garlic in a ceramic bowl, making sure everything is well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight if possible.
  • Preheat your oven to 200°C/180°C fan-forced while lining a large baking tray with baking paper for easy cleanup.
  • Combine cornflakes, parmesan cheese, paprika, and onion flakes in a food processor. Pulse until you achieve coarse crumbs. Transfer the mixture to a bowl and mix in breadcrumbs and parsley. Season generously with pepper.
  • Take the drumsticks out of the buttermilk mixture and allow excess to drip off. Dispose of the buttermilk mixture. Roll each drumstick in the crumb mixture, pressing down gently to cover completely. Transfer to the baking tray. Lightly spray with oil. Bake for 20 minutes, then flip them over. Continue baking for another 20-25 minutes until they are golden and fully cooked. Enjoy with a side of salad.
