Southern air-fried potatoes recipe

Delicious fluffy and crispy potatoes with a spicy coating, perfect with a creamy dip. Use floury potatoes for best results, and ensure to spray with oil before air-frying. Consider using a refillable oil spray bottle for a better coating.
Ingredients:
  • 600g sebago (brushed) potatoes, peeled (see note)
  • 60ml (1/4 cup) milk
  • 200g (1 1/3 cups) plain flour
  • 70g (1 1/3 cups) panko breadcrumbs
  • 5.00 gm ground paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 125g (1/2 cup) sour cream
  • 39.60 gm mayonnaise
  • 42.00 gm fresh lemon juice
  • 40.00 ml chopped fresh chives
  • 1 garlic clove, crushed
Instructions:
  • Cut the potato lengthwise into quarters, then into 3-4cm irregular chunks. Place in a saucepan, cover with cold water, and bring to a boil over high heat. Cook the potato for 7 minutes or until tender. Drain thoroughly.
  • Return the potato to the pan, shaking it to create a rustic texture. Transfer to a tray and allow it to cool until slightly warm.
  • In a shallow dish, mix the eggs and milk together. In another shallow dish, combine flour, breadcrumbs, paprika, garlic powder, onion powder, and cayenne pepper. Season well.
  • One at a time, dip a potato in the egg mixture, letting excess drip off. Coat in flour mixture. Dip in egg again, be gentle to preserve coating, then coat in flour again. Place on a tray. To minimize mess, use one hand for egg and the other for flour. Repeat with remaining potato, egg, and flour.
  • Preheat the air fryer to 200°C for 5 minutes. Generously coat one-third of the potato with olive oil. Place in the air fryer in a single layer and cook for 5 minutes or until crisp and golden. Transfer to a plate. Repeat with the remaining potato in 2 more batches. To serve all at once, return all potato to the air fryer and heat through for 2 more minutes.
  • Prepare the ranch sauce by blending all the sauce ingredients in a small bowl until perfectly smooth. Remember to season to taste.
  • Place the potato in a serving bowl, sprinkle with salt, and enjoy with the tangy ranch sauce.
