Southern Fried Catfish

Crispy cornmeal coated fish - a family favorite!
Ingredients:
  • Vegetable oil
  • 4 catfish fillets, 4 ounces each
  • 3/4 cup cornmeal
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1/8 teaspoon red pepper sauce
  • 2 tablespoons vegetable oil
Instructions:
  • Preheat oven to 275°F. In a 4-quart Dutch oven, heat 2 to 3 inches of oil to 375°F. Rinse fish and gently pat dry with paper towels.
  • In a large bowl, combine cornmeal, flour, and salt. Add milk, eggs, pepper sauce, and 2 tablespoons vegetable oil, mix until well combined. Dip fish into the cornmeal batter, ensuring to shake off any extra coating.
  • Cook 2 fish fillets in oil for 5 to 8 minutes until golden brown. Drain on paper towels, then keep warm on a cookie sheet in the oven while frying the rest of the fish.
