Cheesy sausage grits casserole ready in an hour, perfect for breakfast buffets.
Ingredients:
  • 6 cups water
  • 2 cups uncooked grits
  • 3 cups shredded Cheddar cheese, divided
  • 0.5 cup butter, cut into pieces, divided
  • 1 pound ground pork sausage
  • 12 large eggs
  • 0.5 cup milk
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a large baking dish.
  • 1. Boil water in a large saucepan and add grits. Simmer covered until liquid is absorbed, about 5 minutes. Stir in 2 cups of Cheddar cheese and half the butter until melted.
  • Brown and crumble sausage in a skillet over medium-high heat for 5 to 7 minutes. Add drained sausage to the grits mixture.
  • Combine eggs and milk in a bowl, whisk until smooth. Pour the mixture into the skillet with cooked sausage. Gently scramble the eggs over medium-low heat, then fold them into the grits.
  • Transfer the creamy grits mixture into the ready baking dish. Top it with a few dollops of butter, a generous sprinkle of the remaining 1 cup of Cheddar cheese, and season with salt and pepper to taste.
  • Bake in the preheated oven for 30 minutes until lightly browned.
