Southern yellow squash bars with lemon, a cool and sweet treat.
Ingredients:
  • 3.25 cups peeled, seeded, and diced yellow squash
  • 1.5 cups white sugar
  • 0.5 cup milk
  • 1 egg, beaten
  • 2 tablespoons butter, melted
  • 2 teaspoons lemon extract
  • 1 cup self-rising flour
Instructions:
  • Set up a steamer in a saucepan with water just below it. Boil the water. Steam squash until tender, for 2 to 6 minutes. Mash squash in a bowl until smooth using a fork or potato masher.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • In a large bowl, mix together sugar, milk, egg, butter, and lemon extract. Slowly add and stir in sifted flour. Gently fold mashed squash into the mixture until smooth. Pour the batter into a greased baking dish.
  • Bake until air bubbles form on the surface and pudding is golden brown, about 1 hour. Chill until firm, then cut into bars.
